Ingredients

  • 2/3 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 3/4 teaspoon salt
  • Pinch ground red pepper
  • pinch ground ginger
  • 5 ounces chopped kale
  • 3 oranges, sectioned
  • 1 pt. raspberries
  • 1/3 cup chopped toasted almonds

How to Make It

  1. Whisk together olive oil, vinegar, orange zest, orange juice, honey, Dijon mustard, salt, ground red pepper, and ground ginger. Toss kale, sections from oranges, raspberries, and almonds with 1/4 cup dressing.
