We stir in a bit of greens to up the nutritional value in Kale Mashed Potatoes. This side dish gets a head start with frozen mashed potatoes.

Ingredients

2 cups frozen mashed potatoes (such as Ore-Ida Steam n' Mash)
1 tablespoon butter
2 cups sliced Lacinato kale
1/4 cup sliced green onions
1/2 cup 2% milk
1/2 teaspoon pepper

Preparation

Cook mashed potatoes according to package directions. Melt butter in a large skillet over medium heat. Add kale and green onions; sauté 1 minute. Stir in milk and pepper. Add kale to potatoes; stir to combine.
