Kale Caesar Salad

Kale Caesar Salad is a fresh take on the classic Caesar salad. It’s even better when you have the same great taste for half the calories and double the vitamins.

Cooking Light JANUARY 2014

  • Yield: Serves 4 (serving size: 1 1/4 cups)

Ingredients

  • 2 tablespoons hot water
  • 2 tablespoons canola mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon anchovy paste
  • 1/4 teaspoon pepper
  • 1 garlic clove, grated
  • 2 tablespoons grated Parmesan cheese
  • 5 ounces baby kale
  • 2 ounces toasted cubed baguette

Preparation

Combine hot water, canola mayo, olive oil, lemon juice, anchovy paste, pepper, and garlic in a bowl. Stir in Parmesan cheese. Add kale; toss. Top with toasted cubed baguette.
