Kahlúa-Glazed Bananas

Yield 4 servings (serving size: 4 banana pieces, 2 1/2 tablespoons sauce, and 1/3 cup frozen yogurt)

Ingredients

  • 4 small, firm ripe bananas (about 1 1/4 pounds), peeled
  • 1 cup water
  • 1 tablespoon instant coffee granules
  • 1/3 cup firmly packed brown sugar
  • 3 tablespoons reduced-calorie stick margarine
  • 1/4 cup Kahlúa or other coffee-flavored liqueur
  • 1 1/3 cups vanilla nonfat frozen yogurt

How to Make It

  1. Cut each banana in half crosswise, and cut each piece in half lengthwise. Set banana pieces aside.

  2. Bring water to a boil in a large nonstick skillet. Add the coffee granules, brown sugar, and margarine; reduce heat to medium, and cook until sugar dissolves, stirring frequently. Add banana pieces; cook 5 minutes, turning occasionally. Remove from heat, and stir in Kahlúa. Spoon over frozen yogurt.
