Jicama-Orange Salad

Ingredients

  • 2 cups julienne-sliced jicama
  • 5 oranges, peeled and sectioned
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons nonfat sour cream
  • 1 1/2 tablespoons fresh lime juice
  • 1 1/2 teaspoons vegetable oil
  • 1/8 teaspoon salt

How to Make It

  1. Combine first 4 ingredients in a medium bowl, and toss well. Cover and chill.

  2. Combine sour cream, lime juice, oil, and salt in a small bowl; stir with a wire whisk. Just before serving, drain jicama mixture. Pour dressing over jicama mixture; toss gently.
