Jerk-Seasoned Buffalo Hamburger Steak with Mango-Pineapple Salsa

Howard L. Puckett

Naturally lean and rich-tasting buffalo is now widely available in grocery stores. Its flavor is milder than other wild red meats. You also can use ground elk, deer, or lean beef for the patties. Cook the patties on a grill pan if it's too chilly to grill outdoors. Serve with baked tortilla chips.

Yield: 4 servings (serving size: 1 patty and 1/2 cup salsa)
