Jícama-Lime Slaw

Ingredients

  • 1 medium jícama, peeled and cut into 1/4-inch cubes
  • 1 cup preshredded green cabbage
  • 1/4 cup finely chopped red onion
  • 1/3 cup fresh lime juice (about 2 large limes)
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preparation

Combine all ingredients in a medium bowl, tossing well to coat. Serve at room temperature or chilled.
