Ingredients

  • 5 clove(s) Garlic Chopped
  • 35g Dried Chilies Mashed
  • 15g bulb(s) Ginger root Mashed
  • 25g galangal Mashed
  • 2 tsp fennel powder ground
  • 1 tsp Cumin powder ground
  • 2 bulb(s) fresh turmeric root mashed
  • 2 tsp Corriander powder ground
  • 2 stalk(s) Lemon grass sliced
  • 20g Shallots Red Sliced
  • Stock Ingredients
  • 1 package(s) Wheat noodle or rice Vermicelli boiled-scalded
  • 1 cup(s) Coconut milk fresh
  • 5kg piece(s) Steamed Herring or flaked fish meat deboned
  • 25g Desiccated coconut-(kerisik) wok fried lightly brown
  • 4 piece(s) Dried Tamarind skin sliced
  • Garnished toppings -Optional
  • 250g Steamed Prawn-Tiger Shrimp boiled or scalded
  • 1 Cucumber shredded
  • 2 yellow Onions rings sliced round
  • 1 cup(s) Mint leaves
  • 1 whole(s) Red Chili sliced fine
  • 3 Limes quartered-sliced
  • 1/4 tsp Salt pinch
  • 1/2 tsp Sugar white or brown
  • 250 g Bean Spout

Preparation

  1. Heat oil in wok and saute the grounded mashed spices for 2-3 mintues to release the falvors. Add coconut milk and tamarind skin, lemon grass flaked fish, and kerisik. Boil then reduce heat to simmer an additional 10-minutes adding seasoning, salt, sugar to taste. This is a sweet dish so more is better, but Asians doesn't like it too sweet. Serve in bowls over Spaghetti-noodles_Mee. Garnish with toppings, Shrimp, Cucumber, Onion, Lime,bean spouts, mint leaves, sliced chilies, extra Kerisik or slices of green-onion stalk.
