- 8 egg yolks, well beaten
- 3 cups sugar
- 1 cup golden raisins
- 6 medium oranges, peeled, seeded, and chopped
- 2 tablespoons butter or margarine
- 1 (8-ounce) can crushed pineapple, drained
- 1 cup grated fresh coconut
How to Make It
Combine egg yolks, sugar, raisins, oranges, and butter in top of a double boiler. Cook over boiling water, stirring occasionally, 30 minutes or until thickened. Add pineapple and coconut; cook an additional 10 minutes, stirring occasionally.
Remove from heat, and cool. Chill filling slightly before spreading on cake.
