Jambalaya Oatmeal

Jambalaya Oatmeal

  • Oatmeal Base
  • 1/2 cup(s) rolled oats
  • 1/2 cup(s) low sodium chicken broth
  • 1/2 cup(s) water
  • 1/2 teaspoon(s) paprika
  • 1 teaspoon(s) cajun seasoning
  • Other Ingredients
  • 1 tablespoon(s) butter
  • 1 teaspoon(s) cajun seasoning
  • 2 tablespoon(s) onion diced
  • 2 tablespoon(s) celery diced
  • 2 tablespoon(s) bell peppers diced
  • 2 tablespoon(s) tomato (fresh or diced in a can) diced
  • 2 ounce(s) andouille sausage pre-cooked
  • 2 ounce(s) shrimp (small) pre-cooked


Cooking the cajun trinity:

Dice onion, celery and tomato (if fresh is used).

Heat skillet over medium heat, melt butter. Add vegetables, the one teaspoon of cajun seasoning. Sauté vegetables for about 8 minutes.

Add andouille sausage and shrimp to sautéing vegetables. Continue to sauté for about 2 more minutes until meats are heated through and vegetables are translucent.

Prepare oatmeal as per package instructions, using water/broth blend and adding paprika and cajun seasoning.

Combine, all ingredients and let stand for 2-3 minutes to cool and thicken. Add a couple splashes (or more) of tabasco or your favorite hot sauce to kick up the heat!
