Ingredients

  • 2 whole(s) bay leaves crushed
  • 4 cup(s) beef broth(reduced sodium)
  • 3/8 teaspoon(s) black pepper
  • 3/4 teaspoon(s) chili powder
  • 1 cup(s) chopped bell pepper
  • 1/2 cup(s) chopped green onion tops
  • 4 cup(s) chopped onion
  • 1/4 teaspoon(s) ground cloves
  • 1 pound(s) ham(bite size)
  • 1 pound(s) lean pork(bite size)
  • 2 cup(s) long grain rice
  • 1 tablespoon(s) minced garlic
  • 1/4 cup(s) minced parsley
  • 2 tablespoon(s) oil
  • 1/4 teaspoon(s) red pepper
  • 3 teaspoon(s) salt
  • 1 pound(s) smoked sausage(bite size)
  • 3/8 teaspoon(s) thyme

Preparation

  1. In 5 qt Dutch oven, heat oil. Brown pork chunks & onion. Then add ham, garlic, bell pepper, green onion , parsley, thyme, bay leaves, & cloves. Stir well for 5 minutes. Add sausage, beef broth , rice, salt red & black pepper, and Chili powder, Mix well & bring to a boil. Use less heat & let simmer, with cover on pot for 45 minutes. Stir occasionally to prevent burning. It's ready when rice is done.
