Jalapeño-Cabbage Slaw

Yield Makes 4 cups
Full of flavor and crunch, serve Jalapeño-Cabbage Slaw for a zesty side dish or topping to your favorite fish tacos.


  • 1/2 teaspoon lime zest
  • 1/4 cup fresh lime juice
  • 2 tablespoons light olive oil
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 4 cups thinly shredded red cabbage
  • 1 carrot, cut into thin strips
  • 1 jalapeño pepper, sliced
  • 1/2 cup fresh cilantro leaves

How to Make It

  1. Combine first 6 ingredients in a large bowl. Stir in remaining ingredients. Let stand, stirring occasionally, 10 to 15 minutes before serving.
