Jack Quesadillas with Cranberry Salsa

    The quesadillas were just okay, but the salsa really makes them good. It makes the whole dish, really. Due to a change in plans, the salsa wound up chilling in the fridge for 24 hours, so the flavors had a chance to blend. We wound up finishing it on white tortilla chips the next day!

    This is one of my favorite quick meals. I have been using it for several years now. It is easily prepared especially for a busy parent who likes to know what their kids are eating. Although home roasted Turkey or chicken works better, you can also substitute shrimp or Foster Farms precooked Turkey breast with good results. The original recipe needs no adaptation in my opinion.

    I enjoyed the dish and would make it again. The recipe is appropriate for a special occasion or everyday meal. I prepared the dish for dinner. I used 1/12 tbs of peppers and 2 tsp of lemon juice (I did not have lime juice).

    This was FANTASTIC!!! I had some left over turkey and the cranberry salsa was phenominal! Not only will I make this again, I may even try canning the salsa for gifts! Thank you very much!

    This recipe is OUTSTANDING!!!!!!!! It's very flavorful. I used a whole wheat tortilla and I also fried the quesadilla in a little oil to make it more crunchy. This is absolutely a DO-OVER.

    The salsa is absolutely delicious. I did double the amount of cranberries that I used. I can see myself using the salsa with other poultry dishes as well. A definite keeper!

    I cooked a whole turkey in order to make this recipe, and it was totally worth it!!! It was simple to put together, and the cranberry salsa was fantastic!!!!! We have eaten the salsa with every meal for three days now. Try it....you'll love it!!!

    A great way to use leftovers. Last night we made the CL Turkey Wild-mushroom cakes and tonight we made this. Both are great recipes for turkey, I highly recommend it! I would definitely make this again and use other meats. I made it with rotisserie chicken and turkey and both times it was amazing. It was pretty hot, but I included the seeds from the jalepeno in the salsa. A must-make!

    FABULOUS!!!! I made homemade cranberry sauce, and used it for the salsa - which made this dish even better! So good, this recipe is a keeper for sure!

    We loved this! It's a great way to use up some turkey and extra cranberry sauce in a non-traditional way. My husband does not do "heat" too well but with the sour cream this one was just fine. My one suggestion would be to cook up more green onions to add to the quesadilla layering.

    Really tasty. Used a Gala apple instead of a pear in the salsa. Great way to use up a bit of the leftover turkey and the cranberry sauce, withough feeling like you're having yet another leftover meal.

    Great use of leftover Turkey and Cranberry sauce. Omitted the cilantro , used canned pears in the salsa. Otherwise followed the recipe.

    Loved this recipe. Wasn't sure about the salsa mix of cranberries and cilantro but it made for a sweet and delish flavor. Will make this many more times! I used a pannini press to save time and it was a snap to make.

    Great recipe! We substituted chicken for the turkey and they were delicious. We added homemade guacamole and a side of beans for a hearty meal.

    I absolutely love this recipe. It is a real winner! I used pepper jack cheese instead and HAD to add an avocado slice. Enjoy.

    This was better than I thought it would be. Heat & sweet. We used grilled chicken cutlets and whole wheat tortillas. I am not a huge fan of sour cream but it works really really well here.

    The best recipe for leftover turkey EVER! My dad fell in love with this when I fixed the leftovers after Thanksgiving last year. Claimed it was the best meal he'd had in a year!

    The salsa was fantastic. Used lime zest instead of the juice. The tortillas were a bit dry from the turkey but the salsa made them wonderful. I added arugula to the tortilla dunce one if my favorite quesadilla recipes from cooking light has it in it.

    This was an awesome dish. My wife had made a turkey for a random Sunday dinner, so I didn't have any cranberry sauce. I just made some from some frozen berries and stuck it in the freezer as I made the rest of the dish. I dug this salsa so much, I'm going to replace my usual cranberry sauce with this new recipe. It was AWESOME!!

    I liked this. I started it in a cast iron skillet but couldn't figure out how to flip it so I sprayed top tortilla with a little cooking spay and put it under broiler for about 3 mins. I also added a little hot sauce to chicken and cheese filling which was a nice contrast to the sweeter salsa. Yum!
