Italian Style Artichoke, Tomato and Sausage Salad

Yield 7 servings


  • 1 package Jimmy Dean Regular Roll Sausage, cooked, crumbled, drained
  • 3 teaspoons Balsamic vinegar
  • 1 cup white wine
  • 1 pound artichoke hearts, halved
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 3/4 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper, ground

How to Make It

  1. Heat 2 tablespoons oil in a saute pan and add cooked sausage, balsamic vinegar and white wine. Let cook for 1 minute. Remove sausage from saute pan and place in a bowl. Now add the artichoke hearts, grape tomatoes, parsley, basil and parmesan cheese. Add salt and pepper and stir well.
