1 pound skinless, boneless chicken breast, cut into 1-inch strips
2 tablespoons olive oil
1 medium zucchini, sliced
1/2 cup chopped onion
2 cloves garlic, finely chopped
2 cups chopped tomato
1/4 cup chopped fresh basil
1/2 teaspoon salt
Grated Asiago or Parmesan cheese, optional
How to Make It
In large skillet, cook chicken in hot oil until lightly browned. Add zucchini, onion and garlic; cook and stir 3 minutes or until vegetables are tender crisp. Add tomatoes, cook and stir 2 minutes or until thoroughly heated. Stir in hot pasta, basil and salt. Sprinkle with cheese, if desired.
