Italian Chicken & Pasta Stir-Fry

  • 1 package RONZONI HEALTHY HARVEST Penne Rigate, cooked
  • 1 pound skinless, boneless chicken breast, cut into 1-inch strips
  • 2 tablespoons olive oil
  • 1 medium zucchini, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, finely chopped
  • 2 cups chopped tomato
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon salt
  • Grated Asiago or Parmesan cheese, optional

How to Make It

  1. In large skillet, cook chicken in hot oil until lightly browned. Add zucchini, onion and garlic; cook and stir 3 minutes or until vegetables are tender crisp. Add tomatoes, cook and stir 2 minutes or until thoroughly heated. Stir in hot pasta, basil and salt. Sprinkle with cheese, if desired.
