These delightfully decadent cookies are the perfect sweet treat to finish a zesty main course.

Ingredients

2 cups sugar
1 cup butter, softened
1 teaspoon vanilla extract
1 teaspoon salt
1 15-oz. container ricotta cheese
4 cups all-purpose flour
1 teaspoon baking soda
Sweet Vanilla Icing:
2/3 cup plus 1 T. sweetened condensed milk
1/2 cup butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
Optional: red food coloring

Preparation

Use an electric mixer on medium speed to blend sugar, butter, vanilla, salt and ricotta cheese. Gradually stir in flour; mix in baking soda. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10 to 13 minutes. Cool on wire racks. To prepare Sweet Vanilla Icing: mix all icing ingredients with an electric mixer on low speed. Spread Sweet Vanilla Icing over cookies.
