Best potato soup ever!!! and so easy to make. Made it for St Patricks Day and this will definitely be made more often than once a year. I skipped the bacon and only used Asiago cheese as that is what I had for a topping. Also great for babies- my 9 month old devoured it.

I made this soup tonight for St. Patrick's Day tomorrow and my Mom's Birthday. It was very easy to make and yummy! I used a hand mixer right in the pot instead of having to mix in batches in a blender. The soup seemed a little too thin, so I baked 2 extra potatoes in the microwave and added them to the mixture at the end. I also did not blend them in so that the soup would have some chunks in it. I also added more pepper. Enjoy!

My husband said this was the best potato soup he had ever eaten!! That was worthy of the five stars alone. I added smoked paprika and a dash of nutmeg. Also added a couple of roasted bell peppers that I had sitting in the refrig. I found the texture to be what you would expect from potato soup. Outstanding!

Love, Love, Love this soup recipe! It is so easy and delicious. Use a little more potato to make the soup thicker - and use an immersion hand blender to make this recipe even easier. My friend Kathy makes this frequently for guests; my teenage sons say this is one of their favorite meals of all time!
