Irish Bacon and Cabbage with Mustard Sauce

    I went and sent for this irish bacon and it was delicious. I loved this recipe and it will be used again. The bacon came as a 4 lb piece which I cut into half and cooked the first piece using half the vegetables. I just cooked the second piece last week and we had the leftover vegetables (cooking more). The sauce was what pulled this dish together.

    I saw Wellshire corned beef (wonderfully seasoned) at Whole Foods & used it for this recipe. It was delicious! It took a full 2 1/2 hours to simmer. Followed recipe except used about 1 T cornstarch mixed with a little cold water & added that to the sauce to thicken a bit more. We devoured it! Will definitely make again soon.
