Enjoy the richly aromatic, delicately sweet flavors of roasted garlic in half the time thanks to the Instant Pot. While this method does not produce as much browning on the garlic cloves, they are perfectly tender and ready to be served on an antipasto platter, mashed into a compound butter, or pureed into sauces, salad dressing, and spreads. There’s no shortage of ways to harness the flavor bomb potential of this Instant Pot “roasted” garlic.
8 garlic heads
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
2/3 cup water
How to Make It
Place rack inside inner of Instant Pot. Cut 1/4 inch off the top of each garlic head to expose cloves. Arrange on rack. Drizzle garlic with oil, and sprinkle with salt. Carefully pour water into base of Instant Pot. Close and lock lid, and turn vent to “Seal” position. Press “Poultry” button, and press “+” button to add 5 minutes, bringing the total cook time to 20 minutes.
When garlic is done, open Instant Pot using the natural or quick-release process. Remove garlic cloves from peels. Enjoy alone or in side dishes, sauces, or salad dressings.
