Insalata Pizzas

Both my fiance and I thought that there was nothing special about this recipe (it was not bad, just average), although it does have potential for changing to whatever your vision is. We followed the directions pretty much to the T, although we used rosemary olive oil in the salad dressing and increased the vinegar (because we're not a fan of overly oily salad dressings). The recipe was a snap to make--we were finished before we knew it! The portion size I think is a little slim (one pita was not filling enough for me, but two was a bit too much). Perhaps it'd be more filling if there were some chicken or other protein in the salad.

This was tastier than I expected. I made a few alterations. I cooked the onions for about 10 minutes until they were soft and brown. I also added black pepper to the salad mixture and put some salami on top. This was a light, tasty meal that was satisfying as well. It was also fast to put together.

This was pretty good! I was afraid that it might taste like some kind of thrown-together contents of a college fridge concoction. However actually came out looking and tasting much like a little bistro pizzetta. In true college-fridge style I did make a lot of substitutions. I mixed chopped olives with some chopped salami and tomato paste for a base. Didn't have fresh basil on hand so I tossed some dried basil in with the "base." I would make it again. Especially if too broke/lazy to head to the store..

I really liked this recipe. The only thing I changed with this recipe was using whole wheat pitas. The recipe tasted fresh and light and I liked the acidity of the salad on the pizza. I will definitely make this recipe again as a quick lunch.

This was a great snack for lunch. Very tasty. It turned out to be better than I expected. Would definitely recommend and will prepare this recipe again.

I was pleasantly surprised with this recipe. The combination of the pizza with the salad made this lunch dish outstanding. I used part of a regular tomato instead of grape, and regular black olives instead of Kalamata as that is all I had. Will definitely make this again.

This was an easy and tasty dish - a nice variation of pizza. My only complaint is that it was challenging to eat the pizza, either with hands or with a fork & knife. Would probably make this again sometime.

Great taste and easy to make on a weeknight. Did not change the recipe except caramelized the onions. Wife loved it! Added this to my recipe box!

I made a variation of this recipe and it turned out really well! I sliced tomatoes and cut up cooked chicken and baked it on pitas in the oven at 400deg. I used italian style blend cheese and cooked the onions with greens and added that on top. I added fresh basil, italian seasoning, garlic powder, and red pepper flakes and baked it all until warm. this is a great base recipe for homemade pizzas!
