Individual Mockshire Puddings

Yield 12 servings

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups milk
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 (4-ounce) package crumbled blue cheese
  • 1/4 cup vegetable oil, divided

How to Make It

  1. Beat first 4 ingredients at medium speed with an electric mixer until smooth; stir in cheese, and let stand 10 minutes.

  2. Brush each muffin cup with 1 teaspoon oil, and place in a 450° oven for 10 minutes. Remove from oven and spoon in batter, filling each cup three-quarters full.

  3. Bake at 450° for 25 minutes or until browned and puffy. Serve immediately.
