Ingredients

  • 8 egg whites
  • 3 eggs
  • 6 ounce(s) feta cheese
  • 10 ounce(s) frozen leaf spinach
  • 1/2 teaspoon(s) nutmeg
  • 1/2 teaspoon(s) pepper
  • 1/2 teaspoon(s) salt

Preparation

  1. Defrost, drain and squeeze spinach to remove liquid. Beat eggs, add whites, blend, add herbs, blend, add cheese, blend, add spinach.

  2. Grease cupcake pan. Divide mixture among 12 cupcakes. Bake 20 min at 350. Cool, remove from pan, freeze.

  3. Remove from freezer one at a time and microwave for 1 min. Serve.
