Ingredients
- 8 egg whites
- 3 eggs
- 6 ounce(s) feta cheese
- 10 ounce(s) frozen leaf spinach
- 1/2 teaspoon(s) nutmeg
- 1/2 teaspoon(s) pepper
- 1/2 teaspoon(s) salt
Preparation
- Defrost, drain and squeeze spinach to remove liquid. Beat eggs, add whites, blend, add herbs, blend, add cheese, blend, add spinach.
- Grease cupcake pan. Divide mixture among 12 cupcakes. Bake 20 min at 350. Cool, remove from pan, freeze.
- Remove from freezer one at a time and microwave for 1 min. Serve.
