Iceberg Lettuce Wedges with Thousand Island Dressing

    Really tasty! The dressing was a tad thin, but otherwise was perfect. The chili sauce added some nice complexity and I couldn't pick out the taste of ketchup (that's a good thing!). Served this dressing on cold iceberg wedges as a side for spicy grilled chicken, corn and rice.

    I used to love Thousand Island dressing but haven't purchased it in years. This was an amazingly easy yummy homemade version. Way more dressing per serving than I usually use, so felt quite decadent, and I loved the retro feel of the iceberg wedges.

    Good recipe if you omit the water. It's tasteless and makes the dressing runny. Used a Moroccan-style chili sauce, which gave an interesting complex flavor. Great with Reuben sandwiches.
