Ingredients
- 1 (6-ounce) can thawed apple juice concentrate, undiluted
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 1 3/4 pounds Granny Smith apples, each cut into 1/4-inch wedges and halved (about 3 medium)
- 1/2 cup raisins
- 2 tablespoons white rum or 1/4 teaspoon vanilla extract
- 3 1/2 cups vanilla low-fat ice cream
Preparation
- Combine first 4 ingredients in a large nonstick skillet. Bring to a boil. Reduce heat, and simmer 2 minutes, stirring constantly.
- Add apples and raisins; continue to simmer for 8 minutes or until apples are crisp-tender. Remove from heat; stir in rum. Serve warm over ice cream.
