How to Make It

  1. Soften the ice cream or frozen yogurt and place it between the cookies. Freeze 15 minutes (sandwiches will keep longer wrapped separately in plastic wrap). Try some of these combinations:

    Gingersnaps with orange sherbet blended with vanilla ice cream
    Chocolate wafers with mint chocolate chip ice cream
    Waffle butter cookies with strawberry frozen yogurt
    Chocolate fudge cookies with chocolate chocolate chip ice cream
    Chocolate chip cookies with cookies and cream or toffee bar crunch ice cream
    Frosted oatmeal cookies with cherry vanilla ice cream
