Hummus with Sun-dried Tomatoes

Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 cup sun-dried tomatoes in oil, drained
  • 1 garlic clove, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon ground red pepper

Preparation

  1. Process all ingredients in a food processor until smooth, stopping once to scrape down sides. Serve with olives and toasted pita bread.
