  • 4 yellow banana peppers
  • 2 green banana peppers
  • 2 jalapeño peppers
  • 4 to 5 large tomatoes
  • 2 garlic cloves, minced
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano
  • 2 ounces smoked Cheddar cheese, cubed (optional)
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons sugar (optional)
  • Garnish: fresh basil sprig


  1. Remove and discard seeds from peppers and tomatoes. Dice peppers and tomatoes; place in a large bowl. Toss in garlic, herbs, and, if desired, cheese.
  2. Stir together oil, next 3 ingredients, and, if desired, sugar; add to tomato mixture, tossing to coat. Cover and chill 2 to 4 hours. Serve with a slotted spoon. Garnish, if desired.
