These broiled oysters are similar to Oysters Bienville, a traditional Creole appetizer. The red-hot flavor is characteristic of many Creole dishes.

Ingredients

  • 12 oysters on the half shell
  • Cooking spray
  • 1/3 cup chopped green onions
  • 1/2 cup whole wheat breadcrumbs
  • 3 tablespoons grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground red pepper

Preparation

  1. 1. Preheat broiler.
  2. 2. Place oysters on a baking sheet, and set aside.
  3. 3. Place a nonstick skillet coated with cooking spray over medium-high heat. Add green onions; sauté until tender. Add breadcrumbs and next 3 ingredients, stirring well.
  4. 4. Spoon breadcrumb mixture evenly over oysters. Broil 2 minutes or until golden. Serve immediately.
