My children love this recipe. I originally found it in Southern Living's quick and easy cookbook. I use 2 cups chopped red & green pepper, celery and onion, instead of celery and almonds. Just as good.

Ingredients
- 2 c. cooked chicken breast meat, cubed (You may use leftover rotisserie chicken-delicious!)
- 1 1/2 c. diced celery
- 1/2 c. slivered or sliced almonds
- 1/2 t. salt
- 1/2 t. grated onion
- 1/4 t. pepper
- 2 T. fresh lemon juice
- 1 c. mayonnaise
- 1/2 c. grated sharp cheddar cheese
- 2/3 c. crushed potato chips
Preparation
- Preheat the oven to 375. Spray a 9x13 inch baking dish with vegetable oil.
- In a large mixing bowl, combine the chicken, celery, almonds, salt, onion, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly.
