Horseradish Sauce

2 tablespoons finely chopped onion
2 1/2 tablespoons butter or margarine
2 egg yolks, beaten
1 cup whipping cream
2 tablespoons prepared horseradish


Sauté onion in butter in a heavy saucepan until tender. Strain butter and onion mixture through a sieve into beaten egg yolks. Add whipping cream; stir well. Cook yolk mixture in top of a double boiler over medium heat, stirring constantly, until thickened. Stir in horseradish; serve hot or cold.
