Heat oil in a large nonstick skillet over medium heat. Add onion and next 6 ingredients (through garlic) to pan; cook 30 minutes or until onions are golden, stirring occasionally. Remove from heat; let cool.
Combine sour cream, mayonnaise, and horseradish; spread evenly over cut side of top half of bread. Arrange lettuce over bottom half of bread. Arrange onions and Simply Roasted Pork over lettuce. Top with top half of bread. Cut stuffed loaf into 4 pieces.
I basically made this as written but used vidalia onions, reduced the sugar to 1 tbsp. and skipped the bread...so just served the pork with the caramelized onions and horseradish on the side. All three components were delicious! I will be adding this to my regular rotation.
First time carmelizing onions but so easy and delicious. With the simply roasted pork (I used a large tenderloin)' this was awesome! Such a bright flavor with the horseradish sauce. We will make this often!
For my sandwich-loving husband's birthday, we had "Sandwich week", with a different sandwich for dinner each night. This was the crowning glory of the week, and has become my husband's most-requested sandwich. The horseradish, onions and thyme enhance the porkiness of the pork loin, and make this an excellent meal for any time.
I've never caramelized onions before, but it was really easy and really made the sandwich outstanding! Instead of using french bread, I used 2 smaller ciabatta loaves. For the kids, I left off the onions and horseradish spread.
Yummy! Yummy! Yummy! These were very easy but maybe not "quick" for lunch. The onions take a little while to get to their sweet caramelized state. But once you're there, they are great! The horseradish sauce is the perfect match to the sweet onions and succulent pork. Wow! I served with Arnold's sandwich thins (something like a hamburger bun) and they were GREAT! 5 stars! You could really impress someone with the taste blends in this sandwich.
