Hoppin' John-Style Rice

I wanted to give 4 stars, but I don't know about the whole "worthy of a special occasion" I mean- it was a Thursday night and all, but that's about all that was special about the occasion on which this was made. This recipe makes plain old rice actually quite yummy, although I routinely omit the peas since we're not exactly peas kind of people.
