2 pounds sweet potatoes or yams, peeled and cut into 3/4-inch chunks
1/4 cup PLUS 2 tablespoons Shedd's Spread Country Crock® Spread, melted
1 clove garlic, sliced
1/8 teaspoon salt
1/8 teaspoon ground cayenne pepper
2 tablespoons honey
How to Make It
Preheat oven to 425°. Line large shallow roasting pan with aluminum foil; set aside.
Toss potatoes, 1/4 cup melted Shedd's Spread Country Crock® Spread, garlic, salt and cayenne pepper in large bowl until potatoes are well-coated; turn into prepared pan in single layer. Roast, stirring occasionally, 40 minutes or until potatoes are tender Combine remaining 2 Tbsp. melted Spread with honey in small bowl. Stir into potatoes, then bake an additional 5 minutes. Season, if desired, with additional salt and ground black pepper.
