Bring brown sugar, butter, milk, and honey to a boil in a medium saucepan over medium-high heat, stirring constantly; boil, stirring constantly, 2 minutes. Remove from heat, and cool 30 minutes. Stir in pecans. Serve over hot apple pie topped with vanilla ice cream.
Would give it more than 5 stars. Totally delish AND easy! I did add 1/4 teaspoon of salt since my butter was unsalted and 1/2 teaspoon of vanilla because I like the flavor of vanilla with butterscotch. My daughter who never wants anything but chocolate said she preferred this topping on her ice cream!
