I've made this twice with whole wheat flour and substituted the sugar with Splenda. It's one of my husband's favorites. Add a scoop of frozen vanilla yogurt and you have a fairly low calorie dessert. It is a little time consuming peeling the peaches, but other than that it goes together pretty easy.

The only thing I would change would be to add less lemon juice, maybe only one Tbs. I am usually not a fan of biscuit-style, cobblers, but this one was fantastic. Substituted dried orange peel for lemon rind.The turbinado sugar was worth the splurge.

Can't wait to make this. Wanted to share an easy and quick step to peeling soft fruit. It looks like a veggie peeler but is made to peel soft fruit(peaches, tomatoes etc.) It is by Zyliss and under ten dollars. I got mine at Giant Eagle in Columbus, Ohio but I am sure you can get it on line. Skips the step of hot water or microwave.

This came out almost like a shortcake with fruit baked in which isn't necessarily bad I just wasn't expecting that. I have a go-to cobbler recipe and this one is just different. I substituted strawberries for the blackberries and used wheat flour which made the 'biscuit' that much denser. I liked the flavor of the honey with the fruit but could've used just a touch more sweetness and more juice. I will play with this recipe and see how it goes but definitely a must try!
