Honey-Lime Vinaigrette

Quick and convenient, this vinaigrette is a must-try. It takes five minutes to make. Plus, it's healthier than store-bought dressings, which tend to be loaded with sugar and sodium.

Ingredients

  • 1 1/2 teaspoons grated lime rind
  • 1/2 cup fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup olive oil
  • 1 1/2 tablespoons minced shallots

Preparation

1. Combine first 6 ingredients in a small bowl, stirring with a whisk. Gradually add oil, stirring constantly with a whisk; stir in shallots.
