1 pound skinless, boneless chicken breast, cut into 1-inch cubes
2 teaspoons grated lime rind
2 teaspoons minced garlic
1 teaspoon chili powder
1/4 teaspoon kosher salt
2 tablespoons fresh lime juice
1 tablespoon honey
2 sliced peeled mangoes
Chili powder (optional)
How to Make It
Preheat broiler to high.
Combine first 5 ingredients; toss to coat. Thread chicken onto 8 (6-inch) skewers. Place kebabs on a broiler pan coated with cooking spray; broil 4 minutes on each side or until done.
Combine juice and honey in a small bowl; stir with a whisk. Arrange kebabs and mango slices on a platter; drizzle with honey mixture, and sprinkle with chili powder, if desired.

Awesome flavor combination! Rave reviews from all around the table. Good texture when made with chicken breasts, but even better with thighs. I like how you don't have to marinade the meat. To save time, you can broil without placing on skewers. I may also try thawing frozen mango. Delicious & easy!
Excellent. I grilled the kabobs on our Traeger BBQ with mesquite pellets. Everyone loved this meal. I paired it with Cavatappi with Bacon and Summer Vegetables - also by Cooking Light. Perfect summer menu.
Wow, this was so easy and super delicious. I made it for my Cooking Light and it got gobbled up. My husband and daughter loved it too. I followed the recipe exactly except that I cooked my skewers on the BBQ instead of broiling.
This was quick and easy and really tasty. I used chicken tenders, so I didn't even have to cut them and skewer them. The lime zest directly on the chicken was great, and it was just enough garlic and chili powder for a nice bit of flavor. The mangoes and mini bell peppers went great with this!
We found this to be a tad underwhelming. I think maybe the honey-lime sauce would have worked better as a glaze, because by pouring it over the chicken at the end it didn't really stick and just pooled on our plates. Served with roasted mini bell peppers, as suggested, and also rice and beans.
