I varied the recipe a tiny bit, and I would happily make this again. Instead of shredding the carrots, I cut coins, and because the microwave was in use, I par-cooked them, and sauteed all ingredients in a skillet for a bit. Nice accompaniment to Chicken Sate with Ponzu Sauce.

Extremely easy, ridiculously good. Made this with the Asian Grilled Pork chops. I too cut coins, microwaved the carrots and put everything in a pan just to crisp them up a bit....
