Holiday Quesadillas

Yield 8 servings (serving size: 3 wedges)
The combination of cranberries and orange brings a refreshing taste to the familiar turkey sandwich. If you prefer, use jellied cranberry sauce for a smoother texture and less complex flavor. These make a great finger-food treat for kids.

Ingredients

  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • 8 (8-inch) fat-free flour tortillas
  • 2 cups shredded cooked turkey (about 8 ounces)
  • 1 cup cranberry-orange crushed fruit (such as Ocean Spray)
