Hickory Smoked Sausage and Cheese Soup

Yield 5 servings


  • 2 tablespoons butter
  • 1/2 cup yellow onion, 1/4 dice
  • 1/4 cup garlic, minced
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper, ground
  • 1 package Jimmy Dean Hickory Smoked Roll Sausage, cooked, crumbled, drained
  • 1 teaspoon cumin, ground
  • 1 cup lager beer
  • 3 cups chicken stock
  • 10 ounces Cheddar cheese, shredded
  • 5 tablespoons red bell pepper, 1/4 dice

How to Make It

  1. Heat butter in small pot over medium heat. Place the yellow onion, garlic, salt, pepper and sausage into the pot and cook for 4 minutes over low heat. Add cumin and lager beer. Increase heat to medium-high and simmer for 2 minutes. Add chicken stock and simmer soup for 25 minutes. Remove from heat and stir in the cheese. Garnish the soup with red bell pepper.
