Eating this compote over ice cream was like pie a la mode without the crust! An easy and simple compote. I would increase the spices.
Herbed Fruit Compote
This sweet-savory compote goes especially well with the Honey-Marsala Glazed Ham.

Ingredients
- 1 teaspoon olive oil
- 1 1/2 cups chopped onion
- 2 cups water
- 1/2 cup chopped dried pears
- 1/2 cup chopped dried apricots
- 1/2 cup dried tart cherries
- 1/2 cup raisins
- 1/4 cup sweet Marsala
- 2 tablespoons honey
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rubbed sage
Preparation
- Heat oil in a large saucepan over medium heat. Add onion; cover and cook 10 minutes, stirring occasionally. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer until thick (about 20 minutes). Pour into a bowl; cool.
- Note: Apple juice may be substituted for Marsala, if desired.
