Herbed Cotija Cheese

Serve over Grilled Corn.
Yield: Makes 1 1/4 cups
- 1 cup crumbled Cotija cheese
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh chives
- 1 teaspoon chili powder
- 1 teaspoon lime zest
- Melted butter
- Fresh lime wedges
- Toss together crumbled Cotija cheese, cilantro, chives, chili powder, and lime zest. Brush corn with melted butter; sprinkle with Herbed Cotija Cheese. Serve with fresh lime wedges.
