1/4 cup whole-wheat panko (Japanese breadcrumbs)
2 teaspoons olive oil
1 1/2 teaspoons chopped fresh thyme
1 1/2 teaspoons chopped fresh flat-leaf parsley
1/4 teaspoon black pepper
1/8 teaspoon kosher salt
2 (4-ounce) tomatoes, halved horizontally
How to Make It
Preheat oven to 425°.
Combine first 6 ingredients in a small bowl. Place tomato halves, cut side up, on a foil-lined baking sheet coated with cooking spray. Top tomatoes with panko mixture; coat with cooking spray. Bake at 425° for 25 minutes. Turn broiler to high (do not remove pan from oven). Broil 2 minutes or until topping is browned.
