Try this with grilled, steamed, or Cornmeal-Fried Artichokes.
Makes about 3/4 cup
2/3 cup mayonnaise
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon Dijon mustard
1 shallot, minced*
Salt and pepper to taste
Stir together mayonnaise, parsley, Dijon mustard, and minced shallot. Season with salt and pepper to taste.
*2 Tbsp. minced sweet onion may be substituted.
