Herb-Marinated Shrimp
To prepare this recipe indoors, place a large grill pan over medium-high heat until hot; coat grill pan with cooking spray. Place skewers on grill pan, and cook 3 minutes on each side or until done.

Ingredients
- 1/3 cup basil leaves
- 1/4 cup mint leaves
- 2 tablespoons oregano leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 garlic cloves, halved
- 2 1/2 teaspoons extravirgin olive oil
- 1 1/4 pounds peeled and deveined large shrimp
- Cooking spray
Preparation
- 1. Combine first 6 ingredients in a food processor, and pulse until mixture is coarsely chopped. Add olive oil, and process until well blended.
- 2. Combine herb mixture and shrimp in a large bowl; toss to coat. Cover and marinate shrimp in refrigerator 30 minutes.
- 3. Thread shrimp onto 6 (12-inch) skewers.
- 4. Prepare grill.
- 5. Place skewers on grill rack coated with cooking spray; grill 3 minutes on each side or until done.
