Makes 1/2 cup
1/2 cup butter, softened
1 shallot, minced
1 tablespoon finely chopped fresh thyme
1 teaspoon fresh lemon juice
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
Process all ingredients in a food processor until smooth, stopping to scrape down sides. Transfer butter to center of a piece of plastic wrap; shape into 1 1/2-inch-thick log. Refrigerate until ready to serve.
