Hearty Quinoa with Sautéed Apples and Almonds

    This was my first time trying Quinoa and it was pretty good! I agree with some of the other reviewers, this was good, but did not wow us. I think it's an excellent starting point, though, and plan to mess with the recipe a bit to see if I can get something even better. Maybe the curry powder addition or switching the nuts to something like pecans or walnuts. I think it would be good for everyday meals, but needs some work before being served for a special occasion. I served it with Roasted Pork Tenderloin Medallions with Dried Cranberry Sauce from Cooking Light. I think the two went well together.

    this was good but I toasted the quinoa first and then added the broth, etc.

    @Janin - At what point do you toast the quinoa? Before you rinse it? Or do you rinse, shake dry, then toast? Thank you!

    Just ok. I've made it twice, but not sure if I'll make it again. It makes a lot!
