1 pound skinned, boned chicken breast halves, cut into 1-inch pieces
4 ounces low-fat smoked sausage, sliced
1 (14 1/2-ounce) can Cajun-style stewed tomatoes, undrained
1 (14 1/4-ounce) can fat-free, reduced-sodium chicken broth
2 teaspoons salt-free extra-spicy seasoning
2 cups cooked long-grain rice, cooked without salt or fat
How to Make It
Place first 6 ingredients in a 3 1/2-quart electric slow cooker. Cover and cook on high setting 4 hours. Or, cover and cook on high setting 1 hour; reduce to low setting, and cook 7 hours. Stir in cooked rice during last 30 minutes of cooking time.
