The Haymarket cocktail plays with the notion of a beer cocktail and refines it. Lime and cucumber give this innovative cocktail a refreshing, subtle edge.
2 tablespoons sugar
1/4 cup water
1 (1-inch) piece cucumber
2 tablespoons Suze (bitter French liquor)
1 1/2 tablespoons fresh lime juice
3 ounces pale ale (such as Titan's Great Divide)
1 slice cucumber
How to Make It
Combine sugar and 1/4 cup water in a microwave-safe dish; microwave at HIGH for 2 minutes. Stir until sugar dissolves; cool.
To prepare cocktail, place cucumber piece in a martini shaker; muddle. Add Suze, juice, and 1 1/2 tablespoons syrup; reserve the remaining syrup for another use. Cover and shake. Strain mixture into a highball glass with ice. Top with beer; garnish with cucumber slice.
