3 tablespoons frozen orange juice concentrate, undiluted
1 egg, well beaten
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
2 (1/2-inch-thick) center-cut, fully cooked ham slices, about 2 pounds
2 tablespoons firmly packed brown sugar
How to Make It
Combine rice, raisins, orange juice, egg, nutmeg, and pepper in a large bowl; stir well. Place one ham slice in a 10- x 8- x 2- inch baking dish. Spoon rice stuffing evenly onto ham slice, and top with second ham slice; sprinkle with brown sugar. Bake, uncovered, at 350° for 35 to 40 minutes. Slice into equal portions.
